Abstract
ABSTRACT
This study was conducted to investigate the effect of monosodium glutamate and sodium nitrite on some biochemical parameters in Japanese quails. Forty birds were randomly divided into equal four groups for 60 days. In comparison with the normal group we have found a significant increase in serum levels of AST, ALT, GGT, urea, BUN, creatinine uric acid, glucose and calcium in all treated groups while, there is a decrease in serum total protein, albumin, globulin, protein electrophoresis fractions, iron, phosphorus and zinc in all treated groups. In our view of lipid profile there is an increased level of total cholesterol and TAG concentration in MSG and mixed group while, there is an increase in total cholesterol level and a decreased level in TAG in NaNO2 treated group. In our view of thyroid hormones there is a significant increase in serum T3 level in all treated ones and a significant increase in serum T4 in all treated groups except the MSG-treated group.

Key words: Key words MSG, NaNO2, Japanese quail, liver function, kidney function, hyperlipidemia, hyperglycemia, protein electrophoresis, thyroid hormones and minerals.
