HACCP System Application in One of Poultry Processing Plant in Kafr Elsheikh Province

Abstract
The present study was conducted on a total of 100 samples from the bleeding knife, the scalding water, the surface of carcass (after plucking, after evisceration, and after chilling), the table before processing, the package, air, the plucking machine "rubber fingers" and the worker's hands. The samples containing sterile peptone water were taken by swabbing which placed in sterile test tubes and reserved in an ice box then transported to lab as quickly and rapidly as possible and examined bacteriologically. The results obtained that plucking machine "rubber fingers": Mesophilic was a median value of (16×102) cfu/ cm2 and scalding water (580C): Mesophilic was a median value of (9.4×102) cfu/ ml.
